Fiesta Corn Dip Recipe

This easy appetizer recipe has been a favorite of mine for entertaining people in our home or taking a side dish to parties or gatherings. Everyone loves this delicious Fiesta Corn Dip Recipe and I’m excited to share it with you! Simple recipes with simple ingredients are always good to have. And this is definitely a crowd pleasing dish!

 

Fiesta Corn Dip Recipe

Ingredients

1.  ONE CUP SOUR CREAM (OR SUB PLAIN GREEK YOGURT)

2. 2 CANS FIESTA CORN, DRAINED

3.  1 CUP MAYONNAISE 

4.  1 BUNCH GREEN ONIONS, CHOPPED

5.  1 TSP LAWRY’S SEASONED SALT

6.  1 CUP SHREDDED COLBY JACK CHEESE (OR SUB CHEDDAR)

7.  1 CAN ORIGINAL ROTEL TOMATOES, DRAINED

 

Directions

1. SET CHOPPED GREEN ONIONS ASIDE

2. MIX REMAINING INGREDIENTS IN ONE LARGE BOWL

3. MIX IN HALF OF THE GREEN ONIONS

4. PLACE REMAINING GREEN ONIONS ON TOP OF DIP AS A GARNISH

5. REFRIGERATE BEFORE SERVING

6. SERVE WITH TORTILLA CHIPS OR FRITOS

 

Recipe Tips

– This dip can be made a day or two ahead of time. Simply keep chopped green onions separate and mix in half before serving with the remaining half placed on top as a garnish.

– If you prefer to serve in individual dip bowls, save the green onions for a garnish on each bowl.

– Make sure you have tortilla chips or Fritos to go with this dip!

What to Pair with this Recipe

This is one of my go-to appetizers and side dishes for spring and summer dinner parties and family gatherings. I’ve made this Fiesta Corn Dip Recipe so many times now that I have the ingredients memorized.  I can easily add this to my regular grocery run without listing each ingredient!

I love to pair this Fiesta Corn Dip with taco bowls or enchiladas, burgers and hotdogs, or pulled pork sandwiches. It pairs well with so many different types of foods, so you can’t really go wrong. Going to a barbeque or neighborhood gathering? This dip would be a great addition to any pot luck meal! 

 

 

When to Make this Dip Recipe

Some of my favorite times of the year to make this recipe are: Super Bowl Sunday, Cinco de Mayo, Memorial Day, Father’s Day, Fourth of July, and again on Labor Day. It’s such a great appetizer or side dish for all the major holidays, but especially in spring and summer time because it’s a cold dip. We usually bring it to the lake or pool parties in the summer because it can easily be stored in a cooler and is such a refreshing treat!

I almost always prepare this dip ahead of time so I can easily cross one thing off my list before a party begins or before heading out of the house. It helps to have at least one go-to dish that isn’t required to be prepared fresh, and this is definitely my favorite.
