Easy Cheesy Chicken Enchiladas
The first step of this Easy Chicken Enchilada Recipe is to cook the chicken using a Crock Pot or slow cooker of choice. The beauty of this recipe is you can start the chicken in the morning before you begin your day and let the chicken marinate in the seasoning while it cooks all day.
Then it just takes a little bit of prep and baking before you are tasting the deliciousness of these enchiladas at dinnertime.
Cheesy Chicken Enchilada Ingredients:
2-1/2 lbs Boneless Skinless Chicken Breasts
1 – 24 oz Jar of Mild Chunky Salsa
1 – Packet of Taco Seasoning
1 – Yellow Onion, chopped
2 – 10 oz Jars of Mild Green Chile Enchilada Sauce
1 – 8 oz Bag of Mexican-Style Shredded Cheese
1 – 8 oz Cream Cheese Block
1 – 12 oz / 8 count Package of Taco Size Flour Tortillas
Sour Cream, Guacamole, or Pico de Gallo for toppings
How to Make Mexican-Style Shredded Chicken:
Set Crock Pot or slow cooker to cook on low for 8 hours, or high for 4 hours
Spray inside of Crock Pot or slow cooker with cooking spray
Trim fat off chicken breasts if needed; then place them in the bottom of the Crock Pot or slow cooker
Cover chicken breasts with jar of salsa and taco seasoning packet
Once chicken has fully cooked, you can easily shred the chicken using two forks
Strain chicken to remove any excess liquid
Place shredded chicken back in Crock Pot or slow cooker
Add in the cream cheese, chopped yellow onion, and half of the shredded cheese and stir to mix
Let this melt on High for 30 minutes
Stir to mix melted cheese into shredded chicken and your filling is done!
How to Make Cheesy Chicken Enchiladas:
Preheat oven to 375 degrees
Prep a 9” x 13” baking dish with cooking spray
Spoon cheesy chicken filling onto tortillas; roll up and place seam side down in baking dish
Pour enchilada sauce over the top
Sprinkle the remaining half of the shredded cheese on top
Bake for 20 to 25 minutes or until hot and cheese is melted
Enjoy with sour cream, guacamole, and/or pico de gallo!
