Italian Chicken Kabob Recipe

These simple Italian Grilled Chicken Kabobs are easy to put together and so delicious! This is a perfect summer grilling recipe to make again and again. Plus, it’s an easy and healthy recipe. Let’s get right to it. Here’s the recipe you came for!

Ingredients

4 Boneless Skinless Chicken Breasts

3 Red Bell Peppers

2 Red Onions

2 Good Seasons Italian Salad Dressing & Recipe Mix (plus the vinegar and olive oil this calls for)

Metal Skewers – you can use wood skewers and pre-soak them in water, but I prefer metal skewers. I found this set of 4 skewers at Target for $5.00.

Sprinkle of this McCormick Himalayan Pink Salt, Black Pepper, and Garlic Seasoning on each kabob. I buy this at Target too!

 

Instructions

  1. The first step is to make the Italian dressing you’ll use as the marinade. Follow the instructions on the Good Seasons box and prepare the fresh Italian dressing as noted. You could easily just buy a bottle of Italian dressing, but I think this one is the best. Make one packet for the chicken marinade and one packet for the vegetable marinade. (Tip: Make a third packet if you’re planning to have salad too!)
  2. Slice the boneless skinless chicken breasts into cubes. A size of about 1″ x 1″ works best because you don’t want them too small and falling off. Pour one serving of the Italian dressing marinade into a gallon size Ziploc bag and add the chicken cubes here.
  3. Marinate the chicken for at least an 30 minutes to 1 hour for a good taste of the flavors, or up to 8 hours.
  4. Wash the red bell peppers and slice into 1″ x 1″ squares. Set aside.
  5. Slice and peel the red onions.
  6. Cut red onion into 1″ x 1″ squares and leave in stacked sections as shown in the photo below.
  7. Place the onions and peppers into a container and pour the second serving of the Italian dressing marinade onto the vegetables to marinate for at least 15 minutes.
  8. Start placing food onto grilling skewers in a pattern: Red Pepper, Chicken Cube, Red Onion Stack, Chicken Cube and repeat . . . 
  9.  Sprinkle with seasoning for some extra flavor.
  10. Grill on each side for 5-8 minutes until chicken is cooked through.
  11. Enjoy!

Making your Italian dressing with these seasoning packets is a really simple task, and it tastes so much better than a bottle of dressing. Simply mix in vinegar and olive oil and shake! It’s really that easy. I like to use this for marinades and salad dressing. I like to buy the multi pack of 4 from Target so I always have a packet on hand.
